never tried to mash but they're great roasted. in this case they were boiled in broth w/ broccoli, and the whole thing pureed. so, all the color just means lots of nutrition, not so important for the presentation. though i do think the finished product looks lovely.

what are the purple slices? i'm getting into making bentos, and those would be a great color contrast!
they're all potatoes i used in potato broccoli soup.

did your purple potatoes loose their color after cooking. mine do :-( not nearly as dramatic as i thought purple mashed potatoes should be.
